I will be going to Europe next week. How do I log contacts I make there?
Do I just create a new log book with my European call sign?

In order for us to answer your question correctly, I need to ask you a few more questions:

On your Europe trip, in how many countries do you want to be “on air”?

And do you have a single location (per country) where you want to be “on air”? Or are you planning to have multiple radio locations per country?

I will be using the radio in Croatia only, and already checked with authorities there that I would need to identify as 9A/K1PAP

Yesterday I had during IARU HF World Championship a contact with the Croatian headquarter station 9A0HQ on 40m.
As you are (only) in one country on air
the answer is clear:
Yes, the simplest way is to open a new logbook
with your Croatian guest call sign 9A/K1PAP.
(When opening a new logbook in WRL you can declare which callsign you are using)
